Yes, Dana likes it raw. But she also likes it wrapped in bacon (and BONUS, topped with caviar or roe!)

Straight from the Island Creek Kitchen, Dana shows us how to drink…uh…wow this holiday with the simplest show-stopping recipe you’ll make this holiday season.

Angels on Horseback (Oyster Recipe):

INGREDIENTS:

(recipe is easily scalable depending on your party size!)

50-100 Island Creek Oysters
1-2 lbs. of sliced bacon
1 or 2 30g tins of Paddlefish Roe or Sterling Caviar

INSTRUCTIONS:

1. Preheat the oven to 450 degrees.

2. Place a wire rack or parchment paper onto a baking sheet.

3. Shuck as many oysters as you’d like to serve! (Eat a couple if you’re getting hangry.)

4. Wrap each shucked oyster with a slice of bacon, and secure with a toothpick. Set on to parchment paper or wire rack.

5. Place in the preheated oven and cook for 10-12 minutes or until the bacon is crispy.

6. Pop open your caviar or roe tin and scoop a small dollop on top of each bacon-wrapped oyster.

7. Serve immediately.
