Island Creek Oyster Stuffing Recipe

One common theme you’ll find at our Island Creek Thanksgiving table is classic New England dishes. From whole boiled lobsters, oysters on the half shell, and cooked shrimp with Row 34 Cocktail Sauce, to one of our family favorites: Island Creek Oyster Stuffing. This oyster stuffing recipe is one of the simplest ways to add a little taste of New England to your table this year, no matter where you celebrate.

Island Creek Oyster Stuffing Recipe

Prep time: 25-30min.
Volume: enough for a 16-18 lb. turkey


1 pint of shucked Island Creek Oysters, drained (set 1 cup of oyster liquor aside)
3/4 cup diced celery
1/2 cup of chopped onions
1/2 lb. butter
1 large package of dry prepared stuffing (we like Pepperidge Farm!)


1. Melt butter in a small saucepan.
2. Add chopped celery and onion into the pan.
3. Simmer until the onion is transparent.
4. Remove from heat.
5. Mince the oysters.
6. Combine the celery, onions, oysters, 1 cup of oyster liquor, 1 cup of water and dry stuffing together. Toss gently.

Simple as that! Once tossed together, it’s ready to cook with the bird.
